Prepare the Filling
In a large skillet, heat some oil over medium heat. Add the chopped onion and garlic, sauté until translucent. Add the diced beef steak and brown on all sides.

Add Liquids and Seasoning
Pour in the Guinness beer and beef broth. Add Worcestershire sauce, dried thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes until the beef is tender.

Cool the Filling
Remove from heat and let the filling cool slightly while preparing the pastry.

Assemble the Pie
Preheat your oven to 200°C (390°F). Roll out the puff pastry and line a pie dish with half of it. Fill with the beef mixture and cover with the remaining pastry. Seal the edges and cut slits in the top for steam to escape.

Serve
Let the pie cool for a few minutes before serving. Pair with colcannon and seasonal vegetables.
