Prepare the Steak
Cut the beef steak into 1-inch cubes. Season with salt and pepper.

Sauté Vegetables
In the same pot, add chopped onion, diced carrots, and minced garlic. Sauté until the onion is translucent.

Make the Gravy
Sprinkle flour over the vegetables and stir well. Gradually add beef broth and ale, stirring constantly until the mixture thickens.

Combine and Simmer
Return the seared beef to the pot along with bay leaves and thyme. Bring to a simmer, cover, and cook for about 1.5 hours, or until the beef is tender.

Prepare for Baking
Preheat the oven to 400°F (200°C). Pour the beef mixture into a pie dish and let it cool slightly.

Add the Pastry
Roll out the puff pastry and place it over the beef mixture. Seal the edges and cut slits in the top for steam to escape.

Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown.
