Prepare the Chicken
Preheat your oven to 425°F (220°C). Rinse the chicken under cold water and pat dry with paper towels.

Season the Chicken
In a small bowl, combine olive oil, minced garlic, fresh thyme, salt, and black pepper. Rub this mixture all over the chicken, including under the skin for maximum flavor.

Stuff the Chicken
Cut one lemon into quarters and stuff them inside the cavity of the chicken along with a few sprigs of thyme.

Roast the Chicken
Place the chicken in a roasting pan and drizzle with additional olive oil. Squeeze the juice of the second lemon over the top and place the lemon halves around the chicken. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).

Remove the chicken from the oven and let it rest for 10-15 minutes before carving. Serve with the roasted lemon halves and thyme sprigs for garnish.
