Fry the Chips
Heat vegetable oil in a deep fryer or a large pot to 350°F (175°C). Fry the potato strips in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt to taste.

Prepare the Batter
In a mixing bowl, whisk together flour, cornstarch, baking powder, salt, and pepper. Gradually add the cold beer or sparkling water, mixing until smooth.

Fry the Fish
Dip each fish fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil and fry for about 4-5 minutes on each side, or until golden brown. Remove and drain on paper towels.

Serve the battered fish hot with freshly fried chips and a side of tartar sauce.
