Cider Battered King Prawn Scampi
Method
Instructions
- 1
Prepare the Chips
Peel and cut the potatoes into thick chips. Rinse them under cold water and dry thoroughly.
- 2
Cook the Chips
Heat vegetable oil in a deep fryer or large pot to 180°C (350°F). Fry the chips in batches until golden and crispy, about 5-7 minutes. Drain on paper towels and set aside.
- 3
Make the Batter
In a bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cider until you have a smooth batter.
- 4
Batter the Prawns
Dip each prawn into the batter, ensuring they are fully coated.
- 5
Fry the Prawns
In a separate pot, heat vegetable oil to 180°C (350°F). Fry the battered prawns in batches for 2-3 minutes until golden and crispy. Drain on paper towels.
- 6
Prepare the Salad
In a bowl, combine mixed salad leaves, cherry tomatoes, and cucumber. Drizzle with olive oil and lemon juice, then toss gently.
- 7
Serve
Plate the double cooked chips, top with the cider battered king prawn scampi, serve with tartare sauce on the side, and garnish with the dressed salad.
