    Prepare the Chips

    Peel the potatoes and cut them into thick chips. Rinse them in cold water and pat dry. Parboil the chips in salted water for about 5 minutes, then drain and let them cool.

    Make the Batter

    In a bowl, mix the flour, baking powder, salt, and pepper. Gradually whisk in the cider until smooth. Let the batter rest for about 15 minutes.

    Fry the Chips

    Heat oil in a deep fryer or large pot to 160°C (320°F). Fry the chips in batches until they are tender but not browned, about 5-7 minutes. Remove and drain on paper towels.

    Prepare the Fish

    Heat the oil to 190°C (375°F). Dip each fish fillet into the batter, allowing the excess to drip off. Carefully lower the fish into the hot oil and fry until golden brown, about 4-5 minutes per side. Remove and drain on paper towels.

    Cook the Peas

    In a small pot, cook the frozen peas in boiling water for about 3-4 minutes until tender. Drain and stir in butter, mashing slightly with a fork. Season with salt and pepper to taste.

    Double Fry the Chips

    Increase the oil temperature to 190°C (375°F). Fry the chips again in batches until they are golden brown and crispy, about 3-4 minutes. Drain on paper towels and season with salt.

    Serve the battered fish alongside the double-cooked chips, crushed peas, and a side of tartare sauce.
