Preheat and Prepare
Preheat your oven to 350°F (175°C). Grease and line a 9x13 inch baking pan with parchment paper.

Melt Butter and Mix Sugars
In a medium saucepan, melt the unsalted butter over low heat. Remove from heat and stir in the granulated sugar and brown sugar until well combined.

Add Eggs and Vanilla
Allow the mixture to cool slightly, then add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and mint extract.

Combine Dry Ingredients
In a separate bowl, whisk together the flour, cocoa powder, and salt.

Mix Wet and Dry Ingredients
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the chocolate chips.

Bake
Pour the brownie batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.

Let the brownies cool in the pan for 10 minutes, then lift them out using the parchment paper. Allow to cool completely on a wire rack before cutting into squares.
