Clean the Crabs

Rinse the softshell crabs under cold water and pat them dry with paper towels. Remove the gills and the eyes.

Prepare the Breading

In a shallow dish, mix flour, cornmeal, salt, black pepper, and garlic powder. In another bowl, whisk together eggs and milk.

Coat the Crabs

Dip each crab first in the egg mixture, then dredge in the flour-cornmeal mixture until well coated.

Cooking

Fry the Crabs

Heat vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the crabs and fry for 3-4 minutes on each side until golden brown and crispy.

Drain and Serve

Remove the crabs from the oil and place them on paper towels to drain excess oil. Serve immediately with lemon wedges, tartar sauce, and chopped parsley.
