1. Make the Dough

In a large mixing bowl, combine the all-purpose flour with salt. Gradually add water while mixing with your hands until a rough dough forms.

2. Knead the Dough

Transfer the dough onto a floured surface and knead for about 10 minutes until smooth and elastic. Cover with a damp cloth and let it rest for at least 30 minutes.

3. Roll Out the Dough

After resting, divide the dough into four equal pieces. Roll each piece into a long, thin noodle using a rolling pin or your hands. Aim for a width of about 1/4 inch.

Spicy Lamb Sauce Preparation

4. Cook the Lamb

In a large skillet over medium heat, add the ground lamb. Cook until browned and fully cooked, breaking it apart with a spatula.

5. Add Aromatics

Stir in minced garlic and ginger. Cook for about 2 minutes until fragrant.

6. Season the Meat

Add soy sauce, spicy chili oil, and Szechuan peppercorns to the skillet. Stir well to combine.

7. Simmer the Sauce

Pour in 1 cup of water and bring to a simmer. Cook for 10 minutes, allowing the sauce to thicken slightly. Stir in chopped green onions before removing from heat.

8. Cook the Noodles

Bring a large pot of salted water to a boil. Add the freshly made noodles and cook for 3-5 minutes until al dente. Drain and set aside.

9. Combine Noodles and Sauce

In a large serving bowl, combine the cooked noodles with the spicy lamb sauce, tossing to coat the noodles evenly.

10. Garnish and Serve

Top with chopped cilantro and drizzle extra chili oil over the top to taste. Serve immediately.
