Prepare the Ingredients

Slice the grilled chicken, andouille sausage, and boudin into bite-sized pieces. Thinly slice the onions.

Caramelize the Onions

Heat olive oil in a skillet over medium heat. Add the sliced onions, sprinkle with salt and pepper, and cook until they are golden brown and caramelized, about 15-20 minutes. Stir occasionally to prevent burning.

Cook the Sausages

In a separate skillet, add the sliced andouille and boudin sausages. Cook over medium heat until browned and heated through, about 5-7 minutes.

Combine Proteins

Add the grilled chicken to the skillet with the sausages, sprinkle with Cajun seasoning, and stir to combine. Cook for an additional 2-3 minutes.

Assemble the Cajundillas

On one-half of each chipotle tortilla, layer the chicken and sausage mixture, caramelized onions, and shredded Monterey Jack cheese. Fold the tortillas over to create a half-moon shape.

Grill the Cajundillas

Heat a non-stick skillet or grill over medium-high heat. Place the folded tortillas in the skillet and cook for 3-4 minutes on each side, until the tortillas are golden brown and the cheese is melted.
