Method
Cooking the Pasta
Boil the Water
In a large pot, bring water to a boil over high heat. Add a pinch of salt.
Cook the Pasta
Once the water is boiling, add the fusilli or rotini pasta. Cook according to package instructions until al dente, usually about 8-10 minutes. Stir occasionally.
Drain the Pasta
Once cooked, drain the pasta in a colander and set aside.
Preparing the Alfredeaux Sauce
Melt the Butter
In the same pot used for the pasta, melt the unsalted butter over medium heat.
Add Flour
Once the butter is melted, whisk in the all-purpose flour. Cook for about 1 minute until it forms a paste, stirring constantly.
Add Milk
Gradually add the whole milk while whisking constantly until the mixture is smooth and combined.
Incorporate Cream Cheese
Add the cream cheese, garlic powder, and onion powder. Stir until the cream cheese is fully melted and the sauce is creamy.
Add Parmesan Cheese
Stir in the grated parmesan cheese until it melts and the sauce thickens. Season with salt and black pepper to taste.
Combining the Dish
Mix Pasta and Sauce
Add the drained pasta to the alfredeaux sauce. Stir until the pasta is evenly coated with the sauce.
Serve
Serve the pasta in bowls, garnished with chopped fresh parsley and extra parmesan cheese if desired.
