Marinate Chicken

In a mixing bowl, combine the buttermilk, garlic powder, onion powder, salt, and black pepper. Add the chicken breast fillets, ensuring they are fully submerged in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Prepare Coating Mixture

In a separate bowl, mix together the all-purpose flour, cornstarch, paprika, cayenne pepper, baking powder, salt, and black pepper until well combined.

Coat the Chicken

Remove the marinated chicken from the refrigerator. Take each piece of chicken and shake off the excess buttermilk. Dredge each piece in the coating mixture, ensuring an even coat. Gently shake off any excess flour mixture and place the coated chicken on a plate.

Heat Oil

In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 175°C (350°F). You can test the oil by dropping a small piece of bread into it; if it sizzles and browns quickly, the oil is ready.

Carefully add the coated chicken tenders to the hot oil, making sure not to overcrowd the pan. Fry in batches if necessary. Cook for about 4-5 minutes on each side or until golden brown and cooked through. Use a meat thermometer to check the internal temperature; it should reach 75°C (165°F).

Once cooked, use a slotted spoon to remove the chicken tenders from the oil and place them on a plate lined with paper towels to drain any excess oil. Serve hot with your favorite dipping sauce.
