Preparation
Prepare the Catfish
Rinse the catfish fillets under cold water and pat them dry with paper towels.
Soak in Buttermilk
Place the dried catfish fillets in a large bowl and pour the buttermilk over them, ensuring they are fully submerged. Cover and refrigerate for at least 30 minutes or up to 2 hours.
Breading
Mix Dry Ingredients
In a shallow dish, combine the cornmeal, all-purpose flour, salt, black pepper, paprika, garlic powder, and onion powder. Mix well to ensure even distribution.
Dredge the Catfish
Remove catfish from the buttermilk, letting excess buttermilk drip off. Dredge each fillet in the cornmeal mixture, pressing lightly to ensure a good coating. Shake off any excess breading.
Frying
Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C).
Fry the Catfish
Carefully place the breaded catfish fillets into the hot oil, working in batches to avoid overcrowding. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. The internal temperature should reach 145°F (63°C).
