Prepare the Ingredients

Start by washing the chicken pieces thoroughly. Chop the carrots, celery, and onion, and set them aside.

Prepare the Herbs

Mince the garlic and slice the ginger. Chop the parsley and set aside the thyme, bay leaves, garlic, and ginger for later.

Cooking

Cook the Chicken

In a large pot, add the chicken pieces and water. Bring to a boil over medium-high heat, skimming off any foam that rises to the surface.

Add Vegetables

Once the chicken is boiling, add the chopped onions, carrots, and celery to the pot. Stir well.

Add Herbs and Seasoning

Add the thyme, parsley, bay leaves, minced garlic, sliced ginger, salt, and black pepper. Stir to combine all the ingredients.

Simmer the Soup

Reduce the heat to low and cover the pot. Let the soup simmer for about 45 minutes or until the chicken is cooked through and tender.

Finish with Lemon Juice

After the chicken is cooked, remove it from the pot, shred it into bite-sized pieces, and return it to the soup. Add the lemon juice and stir well.
