Omelet Preparation

Prepare the Scallion Cream Cheese
In a small bowl, mix the cream cheese with finely chopped scallions until well combined. Set aside.

Whip the Eggs
In a medium bowl, crack the eggs and whisk them until fully blended. Season with salt and pepper to taste.

Cook the Omelet
Heat a non-stick skillet over medium heat and add a small amount of oil or butter. Pour in the egg mixture and let it cook undisturbed for 2-3 minutes, or until the edges start to set.

Add Fillings
Once the edges are set, carefully add the cured salmon, scallion cream cheese, fried capers, and fresh dill on one half of the omelet.

Fold and Finish
Using a spatula, gently fold the other half of the omelet over the filling. Cook for an additional 1-2 minutes until the inside is cooked to your liking.
Serving

Prepare the Bagel and Fruit Cup
While the omelet is cooking, slice the bagel in half and toast it if desired. Serve alongside a cup of fresh mixed fruit.

Carefully slide the omelet onto a plate and garnish with additional fresh dill if desired. Serve immediately with the toasted bagel and fruit cup.
