Directions
- 1
Preparing the Salmon
Begin by preheating your oven to 400°F (200°C).
- 2
Seasoning the Salmon
In a small bowl, mix together olive oil, minced garlic, salt, and black pepper. Brush this mixture over the salmon fillets.
- 3
Preparing the Lemon and Dill
Zest the lemon and then slice it in half. Squeeze half of the juice over the salmon fillets. Chop the fresh dill and sprinkle it over the salmon as well.
- 4
Preparing the Vegetables
Trim the ends of the asparagus and place them on a baking sheet. Add the cherry tomatoes to the sheet as well. Drizzle with olive oil and season with salt and pepper.
- 5
Baking the Salmon and Vegetables
Place the salmon fillets on the baking sheet alongside the asparagus and tomatoes. Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
- 6
Serving
Remove from oven and let cool for a couple of minutes. Serve the salmon with the roasted asparagus and tomatoes, garnished with additional dill and lemon wedges.
