Pasta Preparation

    Cook the Pasta

    In a large pot of boiling salted water, add the orecchiette pasta and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In a medium saucepan over medium heat, add the heavy cream. Once heated, stir in the cream cheese until melted and smooth. Gradually add the Parmesan, mozzarella, and Gorgonzola cheeses, whisking until fully melted and creamy.

    Add Garlic and Seasoning

    Add the minced garlic to the cheese sauce. Season with salt and black pepper, stirring well. Let the sauce simmer on low heat for about 5 minutes, stirring occasionally.

Combining Ingredients

    Cook the Pancetta and Vegetables

    In a large skillet, over medium heat, add the diced pancetta. Cook until crispy, about 5 minutes. Add the sliced mushrooms and cook until softened, about 3-4 minutes. Stir in the frozen green peas and cook for another 2 minutes.

    Combine Everything

    Add the cooked orecchiette pasta to the skillet with the pancetta and vegetables. Pour the cheese sauce over the top and gently toss everything together until well combined and heated through.

Serving

    Serve the Dish

    Remove from heat and serve immediately. Optionally, garnish with additional grated Parmesan cheese and freshly cracked black pepper.
