Puff Pastry Preparation

    Preheat the Oven

    Preheat your oven to 200°C (400°F).

    Roll Out Puff Pastry

    On a lightly floured surface, roll out the puff pastry sheet to about 1/8 inch thickness.

    Cut and Fill

    Cut the pastry into squares, approximately 4x4 inches. Place a piece of feta cheese in the center of each square and drizzle with honey.

    Seal the Pastry

    Fold the corners of the pastry over the feta cheese to create a pouch, and seal the edges by pressing them together.

    Bake the Pastry

    Place the filled puff pastries on a baking sheet lined with parchment paper and bake in the preheated oven for 15-20 minutes or until golden brown.

Grilled Sourdough

    Prepare the Sourdough

    Brush each slice of sourdough bread with olive oil on both sides.

    Grill the Sourdough

    Heat a grill pan over medium heat. Grill each slice of sourdough for about 2-3 minutes on each side or until golden and crispy.

Olive Tapenade Preparation

    Blend the Ingredients

    In a food processor, combine black olives, capers, minced garlic, and olive oil. Blend until smooth but still slightly chunky.

    Adjust Seasoning

    Taste and adjust seasoning with salt and pepper if necessary.

Serving

    Plate the Dish

    Serve the hot saganaki puff pastries on a plate alongside the grilled sourdough and a generous dollop of olive tapenade.

    Drizzle with Honey

    Drizzle additional honey over the puff pastries just before serving.
