Make the Sausage
In a medium bowl, combine ground pork, minced garlic, fennel seeds, paprika, salt, black pepper, red pepper flakes, and chopped parsley. Mix well until all ingredients are fully incorporated. Form into small sausage links or patties and refrigerate until ready to use.
Cooking the Seafood

Cook the Seafood
In a large skillet over medium heat, add a splash of olive oil. Once hot, add the cleaned mussels and wild shrimp. Cook until the shrimp turn pink and the mussels open, about 5-7 minutes. Remove from heat and set aside.
Rice and Vegetables Preparation

Prepare the Rice and Vegetables
In the same skillet, add diced onion and bell pepper. Sauté until softened, about 5 minutes. Add the bomba rice and stir to coat in the oil, cooking for another 2 minutes. Add chicken stock, saffron threads, and tomato sauce. Bring to a boil, then reduce heat to low and cover. Cook for 20 minutes until rice is tender.

Once the rice is cooked, gently fold in the mussels, shrimp, and green peas. Cover and let rest for an additional 5 minutes to allow flavors to meld.
