Main Ingredients

Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 450°F (230°C).

  2. 2

    Cook the Spinach and Shallots

In a skillet, melt 2 tablespoons of butter over medium heat. Add the minced shallots and cook until they are translucent, about 3-4 minutes. Add the chopped spinach and cook until wilted, about 2 minutes.

  3. 3

    Prepare the Artichokes

Stir in the chopped artichoke hearts and lemon juice, and cook for an additional 2 minutes. Remove from heat.

Mixing

  1. 4

    Combine Ingredients

In a large bowl, combine the cooked spinach mixture, breadcrumbs, grated Parmesan cheese, chopped parsley, and chopped thyme. Mix well until all ingredients are fully incorporated.

  2. 5

    Season the Mixture

Add salt and pepper to taste and stir to combine.

Assembly

  1. 6

    Prepare Oysters

Arrange the shucked oysters on a baking sheet. If the oysters are unstable, you can place them in a bed of rock salt to keep them steady.

  2. 7

    Top with Mixture

Spoon a generous amount of the mixture over each oyster, ensuring they are well covered.

  3. 8

    Add Butter

Dot each topped oyster with the remaining butter (2 tablespoons) before placing them in the oven.

Baking

  1. 9

    Bake the Oysters

Bake in the preheated oven for about 10-12 minutes, or until the topping is golden brown and the oysters are heated through.

Serving

  1. 10

    Garnish and Serve

Remove from the oven and let cool for a minute. Serve hot, garnished with extra parsley and lemon wedges if desired.
