Dough Preparation

    Prepare Yeast Mixture

    In a small bowl, mix the lukewarm water with the active dry yeast. Let it sit for 5-10 minutes until it becomes frothy.

    Mix Dough

    In a large bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until it forms a dough.

    Knead Dough

    Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

    Let Dough Rise

    Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours or until doubled in size.

Sauce Preparation

    Cook Sauce

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

    Add Tomatoes

    Add the San Marzano tomatoes, salt, black pepper, and dried oregano to the saucepan. Simmer for 20-25 minutes, stirring occasionally.

    Blend Sauce

    Use an immersion blender to blend the sauce until smooth. Set aside to cool.

Assembling the Pizza

    Preheat Oven

    Preheat your oven to the highest setting (usually around 250°C / 482°F) and place a pizza stone inside if you have one.

    Shape Dough

    Once the dough has risen, punch it down and divide it into two equal portions. Roll out each portion on a floured surface into a 10-12 inch circle.

    Add Sauce and Toppings

    Spread a generous amount of the San Marzano sauce over the dough, leaving a small border. Place slices of fresh mozzarella evenly on top.

    Bake Pizza

    Transfer the pizza to the preheated oven (or onto the pizza stone) and bake for 10-15 minutes until the crust is golden and cheese is bubbling.

    Garnish

    Remove the pizza from the oven, drizzle with olive oil, and scatter fresh basil leaves over the top.

    Slice and Serve

    Slice the pizza into wedges and serve hot.
