Method

For the Pan-Seared Trout

    Prepare the Trout

    Season the trout fillets with salt and black pepper on both sides.

    Heat the Oil

    In a large skillet, heat olive oil over medium-high heat until hot.

    Cook the Trout

    Place the seasoned trout fillets skin-side down in the skillet. Cook for about 4-5 minutes until the skin is crispy.

    Flip the Trout

    Carefully flip the trout and cook for an additional 3-4 minutes until the fish is cooked through and flakes easily with a fork.

    Serve

    Remove from the skillet, serve with lemon wedges.

For the Cauliflower Purée

    Cook the Cauliflower

    In a pot, bring water to a boil and add the cauliflower florets. Cook until tender, about 10-12 minutes.

    Blend the Cauliflower

    Drain the cauliflower and transfer it to a blender. Add heavy cream, butter, salt, and black pepper.

    Purée Until Smooth

    Blend until smooth and creamy. Adjust seasoning if necessary.

For the Haricot Vert Amandine

    Prepare the Beans

    Trim the ends of the haricot vert and set aside.

    Sauté the Garlic

    In a skillet, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

    Cook the Beans

    Add the haricot vert to the skillet and sauté for 5-7 minutes until tender but still crisp.

    Finish with Almonds

    Stir in the toasted almonds and lemon juice. Toss to combine and serve warm.

For the Toasted Cauliflower Florets

    Prepare for Roasting

    Preheat the oven to 425°F (220°C).

    Season the Cauliflower

    In a bowl, toss the cauliflower florets with olive oil, salt, and black pepper until well coated.

    Roast the Cauliflower

    Spread the florets on a baking sheet and roast for 20-25 minutes until golden brown and crispy.
