Preparing the Potatoes

    Peel and Cut Potatoes

    Peel the Russet potatoes and cut them into thin strips, about 1/4 inch thick. You can also use a mandoline for even cuts.

    Soak the Potatoes

    Place the cut potato strips in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch. This helps achieve a crispier texture.

    Drain and Dry

    After soaking, drain the potatoes and pat them dry with paper towels to remove as much moisture as possible.

Frying the Frites

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a kitchen thermometer to check the temperature.

    Fry the Potatoes

    Carefully add a small batch of the dried potato strips to the hot oil. Do not overcrowd the pot. Fry for about 5-6 minutes, or until golden brown and crispy.

    Drain and Season

    Using a slotted spoon, remove the frites from the oil and place them on a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with salt to taste.

    Repeat the frying process with the remaining potato strips until all are cooked.
