Preparing the Prime Rib

    Cook the Prime Rib

    Preheat your oven to 375°F (190°C). Season the prime rib generously with salt and black pepper. Place it on a rack in a roasting pan and roast for about 1 hour for medium-rare, or until the internal temperature reaches 130°F (54°C). Remove from the oven and let it rest for at least 15 minutes before slicing thinly.

Caramelizing Onions

    Caramelize the Onions

    In a large skillet over medium heat, add 2 tablespoons of vegetable oil. Once hot, add sliced onions. Cook, stirring occasionally, for about 20-25 minutes or until the onions are golden brown and caramelized. Season with salt to taste.

Making Au Jus

    Prepare the Au Jus

    In a saucepan, combine the beef broth, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper. Bring to a simmer over medium heat and cook for about 10 minutes. Adjust seasoning to taste.

Making Horseradish Crema

    Mix the Horseradish Crema

    In a small bowl, combine sour cream, prepared horseradish, lemon juice, and salt. Stir well to combine and refrigerate until ready to serve.

Preparing Frites

    Make the Frites

    Peel and cut the potatoes into thin strips. Heat vegetable oil in a deep fryer or a large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch. Remove with a slotted spoon and drain on paper towels. Season with salt to taste.

Assembling the Sandwich

    Assemble the French Dip Sandwich

    Slice the French rolls in half. Layer the sliced prime rib, caramelized onions, and provolone cheese on the bottom half of each roll. Top with the other half and serve with a side of au jus for dipping and horseradish crema.
