Method
Waffles
- 1
Prepare the Waffle Batter
In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, whisk together the milk, eggs, melted butter, and vanilla extract. Combine the wet ingredients into the dry ingredients until just mixed; do not overmix.
- 2
Cook the Waffles
Preheat the waffle iron according to the manufacturer’s instructions. Pour the batter into the preheated waffle iron and cook until golden brown and crispy, usually about 5 minutes. Repeat until all batter is used.
Crispy Chicken
- 3
Marinate the Chicken
In a bowl, soak the chicken breasts in buttermilk for at least 30 minutes (or overnight) to tenderize and flavor the chicken.
- 4
Prepare the Coating
In a shallow dish, combine the flour, paprika, garlic powder, onion powder, salt, and black pepper.
- 5
Fry the Chicken
Heat vegetable oil in a large skillet over medium-high heat. Remove the chicken from the buttermilk, allowing excess to drip off, and dredge in the flour mixture, ensuring even coating. Fry the chicken for 7-10 minutes on each side or until golden brown and fully cooked. Drain on paper towels.
Spicy Syrup
- 6
Make the Spicy Syrup
In a small saucepan, combine maple syrup and hot sauce over low heat. Stir until well mixed and heated through. Adjust spice level by adding more hot sauce if desired.
Assembly
- 7
Assemble the Dish
Place a waffle on a plate, top with crispy chicken, and drizzle with spicy syrup. Garnish with mixed berries on the side.
