Chilaquiles Base

Method

Preparation

  1. 1

    Prepare Fried Eggs

In a non-stick skillet, heat a small amount of oil over medium heat. Crack the eggs into the skillet and cook until the whites are set and the yolks are desired doneness (sunny-side up or over-easy). Season with salt and pepper to taste. Remove from heat and set aside.

  2. 2

    Prepare Avocado

Slice the avocado in half, remove the pit, and scoop the flesh out with a spoon. Cut the avocado into thin slices or cubes and set aside.

Assembly

  1. 3

    Layer the Chilaquiles

In a large serving platter or individual bowls, spread the corn tortilla chips evenly. Pour the green salsa over the chips, ensuring they are well-coated.

  2. 4

    Add Cheese

Sprinkle the shredded cheese over the salsa-covered chips. The heat from the salsa will help melt the cheese slightly.

  3. 5

    Top with Fried Eggs

Carefully place the fried eggs on top of the cheesy chilaquiles.

  4. 6

    Garnish with Avocado

Add the sliced or cubed avocado on top of the fried eggs and chilaquiles.

  5. 7

    Season and Serve

Adjust seasoning with additional salt and pepper if needed. Serve immediately while hot.
