    Prepare the Calamari

    Rinse the calamari steaks under cold water and pat them dry with paper towels. Cut the steaks into smaller pieces if desired.

    Set Up Dredging Station

    In three separate bowls, place the flour in the first bowl, beaten eggs in the second bowl, and breadcrumbs mixed with salt and pepper in the third bowl.

Cooking

    Coat the Calamari

    Take each piece of calamari and first coat it in the flour, then dip it into the beaten eggs, and finally coat it in the breadcrumb mixture. Make sure each piece is well coated.

    Fry the Calamari

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the coated calamari pieces in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes on each side until golden brown.

    Drain and Serve

    Once cooked, remove the calamari from the skillet and place them on a plate lined with paper towels to drain excess oil. Serve hot with pesto and cocktail sauce on the side.
