Burger Patty Preparation

    Mix and Form the Patties

    In a large bowl, combine the ground beef, salt, and black pepper. Gently mix until just combined, being careful not to overwork the meat. Divide the mixture into two equal portions and shape each into a 1/2-pound patty, making a slight indentation in the center of each patty to prevent puffing during cooking.

    Cook the Patties

    Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on one side, then flip and add the gruyere cheese on top. Cook for an additional 3-4 minutes or until the cheese is melted and the desired doneness is reached.

    Slice and Cook the Onion

    Thinly slice the yellow onion. In a skillet, heat the olive oil over medium heat. Add the sliced onion and a pinch of salt. Cook, stirring occasionally, for about 20-25 minutes until the onions are soft and caramelized, reducing heat if necessary to prevent burning.

    Toast the Buns

    While the patties are cooking, toast the brioche buns on the grill or in a toaster until golden brown.

    Assemble the Burger

    Spread 2 tablespoons of boursin cheese on the bottom half of each toasted brioche bun. Place the cooked beef patty with melted gruyere on top, followed by a generous amount of caramelized onions. Top with the other half of the bun.

    Prepare the Potatoes

    Peel and cut the russet potatoes into thin strips for fries. Rinse them under cold water to remove excess starch, then pat dry with a towel.

    Fry the Potatoes

    In a deep pot, heat the vegetable oil to 350°F (175°C). Carefully add the potato strips in batches and fry for about 5-7 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt while still hot.
