Prepare the Dough
In a large bowl, whisk together the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.

Add Milk
Make a well in the center of the mixture and pour in the milk. Stir until just combined.

Shape the Biscuits
Turn the dough onto a floured surface and gently knead it a few times. Pat it to about 1-inch thickness and cut out 2 biscuits using a biscuit cutter or a glass.

Bake
Place the biscuits on a baking sheet and bake in a preheated oven at 425°F (220°C) for 12-15 minutes or until golden brown.

Cook the Sausage
In a skillet over medium heat, cook the ground sausage until browned, breaking it apart with a spoon.

Make the Roux
Sprinkle the flour over the cooked sausage and stir to combine, cooking for about 1 minute.

Add Milk and Season
Gradually add the milk while stirring to prevent lumps. Bring to a simmer and cook until thickened, about 5 minutes. Season with salt, black pepper, and red pepper flakes to taste.

Split the biscuits in half and spoon the sausage gravy over the top. Sprinkle with cheddar cheese before serving.
