Main Ingredients

Hollandaise Sauce Ingredients

For Potatoes O'Brien

Method

Preparing Potatoes O'Brien

  1. 1

    Cook the Potatoes

In a skillet over medium heat, add olive oil. Once heated, add the diced potatoes, onion, and bell pepper. Season with salt and pepper to taste. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are golden brown and tender.

Making Hollandaise Sauce

  1. 2

    Prepare the Sauce

In a heatproof bowl over simmering water, melt the butter. In another bowl, whisk egg yolks with lemon juice and salt until thickened. Gradually whisk in the melted butter until smooth and creamy. Add a pinch of cayenne pepper for flavor and keep warm.

Poaching Eggs

  1. 3

    Poach the Eggs

Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide them into the water. Poach for about 3-4 minutes until the whites are set but the yolks are still runny. Remove the eggs with a slotted spoon and set aside.

Assembling the Dish

  1. 4

    Combine Everything

Toast the English muffins and place a slice of Canadian bacon on each half. Top with a poached egg and drizzle generously with hollandaise sauce. Serve alongside the crispy Potatoes O'Brien.
