    Sauté the Vegetables

    In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until the onion is translucent.

    Brown the Meat

    Add the ground beef to the pot and cook until browned. Drain any excess fat.

    Add Spices and Sauces

    Stir in chili powder, cumin, salt, and black pepper. Mix well, then add tomato sauce, kidney beans, diced tomatoes, and beef broth. Stir to combine.

    Simmer the Chili

    Bring the mixture to a boil, then reduce heat to low. Let it simmer uncovered for 30-40 minutes, stirring occasionally.

    Prepare the Toppings

    While the chili is simmering, prepare the toppings. Warm tortilla chips in the oven and shred the Monterey Jack and cheddar cheese.

    Ladle the chili into bowls, top with shredded cheese, sliced jalapeños, and serve with warm tortilla chips on the side.
