Pretzel Sticks
Prepare the Dough
In a large mixing bowl, combine warm water, brown sugar, and yeast. Let it sit for about 5 minutes until frothy. Add in the flour and salt, and mix until a dough forms.
Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Place it in a greased bowl, cover it, and let it rise for about 1 hour or until doubled in size.
Shape the Pretzels
Preheat the oven to 425°F (220°C). Punch down the dough and divide it into 8 equal pieces. Roll each piece into a long rope and shape into a pretzel.
Boil and Bake
In a large pot, bring 10 cups of water and baking soda to a boil. Boil each pretzel for 30 seconds, then transfer to a baking sheet lined with parchment paper. Brush with beaten egg and sprinkle with coarse salt.
Bake
Bake in the preheated oven for 12-15 minutes or until golden brown. Remove and let cool slightly.
Homemade Cheese Sauce
Add Milk
Gradually whisk in the milk, stirring constantly to avoid lumps. Continue to cook until the mixture thickens, about 3-5 minutes.
Add Cheese and Seasoning
Remove from heat and stir in the shredded cheese, garlic powder, salt, and pepper until smooth. Adjust seasoning to taste.
