    Bake the Potatoes

    Preheat your oven to 400°F (200°C). Wash the Russet potatoes thoroughly and pierce them with a fork several times. Rub the potatoes with olive oil and sprinkle with salt. Place them directly on the oven rack and bake for about 45-60 minutes, or until tender.

    Prepare the Skins

    Once the potatoes are baked, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out some of the flesh, leaving about 1/4 inch of potato on the skin.

    Add Toppings

    Brush the insides of the potato skins with olive oil, and season with salt and pepper. Fill each skin with cheddar jack cheese and sprinkle with cooked bacon. Place the filled potato skins back in the oven.

    Bake Again

    Return the potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

    Garnish and Serve

    Remove the potato skins from the oven, top with chopped scallions, and serve hot with a side of sour cream.
