Preparation

    Prepare the Dipping Sauce

    In a small bowl, combine 1 cup of ranch dressing with 1 tablespoon of chopped fresh chives and 1 teaspoon of garlic powder. Mix well and set aside in the refrigerator to chill.

    Prepare the Coating

    In a bowl, combine flour, cornmeal, garlic powder, onion powder, paprika, salt, and pepper. Mix until well blended.

    Prepare the Egg Mixture

    In a separate bowl, whisk together the eggs and milk until smooth.

    Coat the Pickles

    Dip each pickle slice into the egg mixture, allowing any excess to drip off, then dredge in the flour mixture until evenly coated. Set aside on a plate.

    Fry the Pickles

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the coated pickle slices in batches, frying until golden brown (about 2-3 minutes per side). Remove from oil and place on paper towels to drain excess oil.

    Serve the Hubcap Chips warm with the cool ranch dipping sauce on the side.
