Prepare the Haddock
In a shallow dish, combine flour, cornmeal, salt, and black pepper. Dredge each haddock fillet in the mixture, dip in beaten eggs, and then coat again with the flour mixture. Set aside.

Fry the Haddock
Heat vegetable oil in a deep skillet over medium-high heat. Once hot, add the coated haddock fillets and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
On the bottom half of each brioche roll, place a lettuce leaf followed by a fried haddock fillet. Top with a slice of American cheese, sliced tomato, red onion, jalapenos (to taste), and a generous dollop of chipotle mayo. Place the top half of the roll over the sandwich.

Serve immediately with your choice of sides.
