Preheat the Oven
Preheat your oven to 180°C (350°F).

Prepare the Cheese Sauce
In a saucepan over medium heat, melt the Monterey Jack cheese with the homemade cheese sauce until smooth and well combined. Stir occasionally to prevent burning.

Layer the Nachos
On a large baking sheet, spread half of the corn tortilla chips evenly. Pour half of the cheese sauce over the chips, then sprinkle half of the diced tomatoes, black olives, red onion, and jalapenos on top.

Repeat the Layers
Add another layer of the remaining corn tortilla chips, followed by the rest of the cheese sauce and toppings.

Bake
Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and the edges of the chips are golden.

Serve
Remove from oven and let cool slightly. Serve hot with salsa and sour cream on the side.
