Preparation
In a large bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and paprika.

Coating the Chicken
Pat the chicken wings or tenders dry with paper towels. Dredge each piece in the flour mixture, ensuring they are evenly coated. Shake off any excess flour.

Frying
In a deep pot or fryer, heat the oil to 350°F (175°C). Carefully add the coated chicken in batches, frying for about 8-10 minutes or until golden brown and cooked through. Use a thermometer to ensure the internal temperature reaches 165°F (74°C).

Saucing
Once cooked, remove the chicken and let it drain on paper towels. If tossing in sauce, place the fried chicken in a large bowl and pour your choice of buffalo sauce, garlic parmesan sauce, or BBQ sauce over them. Toss to coat evenly.

Serve the chicken fenders hot with your choice of dipping sauces on the side.
