Preparation

    Prepare the Casings

    Soak the pork casings in water for at least 30 minutes to make them pliable. Rinse them thoroughly under cold water to remove any salt.

    Mix the Meat

    In a large bowl, combine the ground pork and ground beef. Mix well to ensure even distribution.

    Add Spices

    In a separate small bowl, mix together the salt, black pepper, garlic powder, onion powder, paprika, fennel seeds, crushed red pepper flakes, and sugar. Add the spice mixture to the meat and mix thoroughly.

    Incorporate Ice Water

    Gradually add the ice water to the meat mixture, mixing with your hands until the mixture is sticky and well combined.

Stuffing

    Prepare the Sausage Stuffer

    Attach the sausage stuffer to your meat grinder or use a standalone sausage stuffer. Slide one end of the soaked casing onto the stuffer tube.

    Stuff the Casings

    Carefully fill the casing with the meat mixture, making sure not to overfill. Leave some space at the end. Tie off the end of the casing with kitchen twine.

    Twist the sausage into links, about 6 inches long, and tie off the ends. Repeat with the remaining casings and meat mixture.

Cooking

    Preheat your grill or skillet over medium heat. Cook the sausages for about 15-20 minutes, turning occasionally until they are cooked through and have a nice brown color.
