Prepare the Avocados
Cut the ripe avocados in half, remove the pit, and scoop the flesh into a mixing bowl.

Mash the Avocados
Using a fork or a potato masher, mash the avocados to your desired consistency (smooth or chunky).

Add Lime Juice and Salt
Pour in the fresh lime juice and sprinkle the salt into the bowl. Mix well to combine.

Incorporate Vegetables
Add the diced onion, diced tomatoes, chopped cilantro, and diced jalapeño to the avocado mixture. Stir gently until evenly distributed.

Taste and Adjust
Taste the guacamole and adjust the seasoning with additional salt or lime juice as needed.

Prepare the Oil
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of tortilla; it should sizzle immediately.

Cut the Tortillas
While the oil is heating, cut the corn tortillas into triangles (quarters).

Fry the Tortilla Chips
Once the oil is hot, carefully add a handful of tortilla triangles to the oil. Fry for about 2-3 minutes or until golden brown, turning occasionally.

Drain and Season
Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. Immediately sprinkle with salt.
