Dough Preparation

Activate Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

In a large mixing bowl, whisk together flour and salt.

Combine Ingredients
Once the yeast is activated, add it to the flour mixture along with olive oil. Mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Preheat Oven
Preheat your oven to 375°F (190°C).

Shape the Dough
Once the dough has risen, punch it down and roll it out into a rectangle (about 12x18 inches).

Spread the shredded mozzarella cheese evenly over the dough. Scatter pepperoni slices and jalapenos on top. Sprinkle with Italian seasoning.

Roll and Cut
Starting from one long side, roll the dough tightly into a log. Pinch the seams to seal. Cut the log into 12 equal pieces.

Place the cut pieces on a greased baking sheet, cover, and let them rise for another 30 minutes.

Bake in the preheated oven for 20-25 minutes, or until golden brown.
