Prepare the Chicken
Season the chicken breasts with salt and pepper on both sides. Dredge each breast in flour, shaking off the excess.
Sear the Chicken
In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Add the chicken breasts and cook for about 4-5 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Make the Sauce
In the same skillet, add the shallots and sauté for about 2 minutes until softened. Pour in the white wine and lemon juice, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and let it reduce for about 3-4 minutes.
Add Capers and Finish Sauce
Stir in the capers and the remaining tablespoon of butter. Allow the sauce to simmer for another minute.
Combine and Serve
Return the chicken to the skillet, coating it with the sauce. Cook for an additional minute to heat through. Garnish with fresh parsley and serve immediately.
