Cook the Pasta

In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

Cook the Sausage

In a large skillet, heat olive oil over medium heat. Add crumbled sausage and cook until browned, about 5-7 minutes. Remove sausage and set aside.

Sauté Vegetables

In the same skillet, add chopped onion, shallots, and sliced mushrooms. Sauté until softened and lightly browned, about 5-7 minutes.

Deglaze with Sherry

Pour in the sherry wine and scrape the bottom of the skillet to deglaze. Allow to simmer for 2-3 minutes.

Make the Cream Sauce

Reduce the heat to low, then add the heavy cream, cooked sausage, and frozen peas. Stir to combine and let simmer for about 5 minutes until heated through.

Combine Pasta and Sauce

Add the cooked penne pasta to the skillet and toss to coat evenly with the sauce. Season with salt and black pepper to taste.

Serve

Plate the pasta and top with grated Parmesan cheese. Serve immediately.
