Prepare the Filling

In a skillet, heat a tablespoon of oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

Cook the Beef

Add the ground beef to the skillet, breaking it apart. Cook until browned. Stir in the frozen peas, salt, and black pepper, cooking for an additional 2-3 minutes. Remove from heat and let cool.

Combine Rice and Filling

In a large bowl, combine the cooked Arborio rice, the beef and pea mixture, cubed mozzarella, Parmesan, and the egg. Mix until well incorporated.

Form the Arancini

With wet hands, take a portion of the rice mixture (about the size of a golf ball) and shape it into a ball. Repeat until all the mixture is used.

Coat with Bread Crumbs

Roll each rice ball in bread crumbs until fully coated.

Fry the Arancini

In a deep frying pan, heat the oil over medium-high heat. Fry the arancini in batches until golden brown, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

Serve

Serve hot with marinara sauce or your favorite dipping sauce.
