Pancake Batter

Method

Preparation

  1. 1

    Prepare the Batter

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together the buttermilk, eggs, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.

  2. 2

    Cook the Pancakes

Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter. Pour approximately 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for an additional 1-2 minutes or until golden brown. Repeat with the remaining batter.

  3. 3

    Prepare the Flavors

For the blueberry pancakes, fold in 1 cup of fresh blueberries into the batter after mixing. For the strawberry pancakes, slice 1 cup of fresh strawberries and fold them into the batter. For the chocolate chip pancakes, fold in 1 cup of chocolate chips. The buttermilk pancakes can be made without any additions.

  4. 4

    Serve

Stack the pancakes on a plate and serve with maple syrup, whipped cream, or your choice of toppings.
