Prepare the Batter

In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, beat the eggs and then add the milk and melted butter. Combine the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the crushed pineapple and toasted coconut.

Cook the Pancakes

Preheat a griddle or non-stick skillet over medium heat. Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes until golden brown. Repeat with the remaining batter.
