Preparation Steps
Prepare the Chicken
Season the chicken breasts with salt and pepper. Heat a skillet over medium heat and add butter. Cook the chicken for about 6-7 minutes per side until golden brown and cooked through. Remove and keep warm.
Make the Roasted Espresso Butter
In a small bowl, mix the softened butter with espresso powder until well combined. Set aside.
Cook the Waffles
Prepare the Belgian sugar waffles according to package instructions or your favorite recipe.
Prepare Hollandaise Sauce
In a double boiler or heat-proof bowl set over simmering water, whisk together the egg yolks, lemon juice, and a pinch of salt. Gradually whisk in melted butter until the sauce is thickened. Remove from heat.
Assemble the Dish
Place a waffle on a plate, top with a piece of fried chicken, a spoonful of bacon jam, and drizzle with hollandaise sauce. Finish with a dollop of roasted espresso butter and sprinkle with chopped green onions.
