Prepare the Ingredients

Gather all the ingredients. If using fresh hash browns, rinse and squeeze out excess moisture. If using frozen, thaw them slightly.

Cook the Hash Browns

In a skillet over medium heat, cook the hash browns until golden and crispy. Set aside.

Sauté Vegetables

In the same skillet, add a bit of oil, then sauté the diced bell peppers and onions until softened.

Cook the Protein

Add the choice of protein (bacon, chorizo, or portobello) to the skillet and cook until done. If using bacon, ensure it is crispy.

Scramble the Eggs

In a bowl, whisk the eggs. Pour them into the skillet and scramble until fully cooked.

Combine Ingredients

Add the black beans, hash browns, jack cheese, and cheddar cheese to the skillet. Mix until well combined and the cheese has melted.

Prepare Avocado Crema

In a small bowl, mash the avocado and mix with lime juice. Season with salt to taste.

Assemble the Burritos

Warm the tortillas in a dry skillet. On each tortilla, add a portion of the filling mixture, top with avocado crema, cotija cheese, and a drizzle of red or green chili sauce. Roll up the tortillas to form burritos.

Cut the burritos in half and serve with extra chili sauce on the side.
