Prepare the Bacon
Preheat your smoker to 225°F (107°C). Lay the thick-cut bacon strips out on a wire rack over a baking sheet.

Soak Wood Chips
Soak the pecan wood chips in water for at least 30 minutes, then drain.

Make the Glaze
In a saucepan, combine bourbon, maple syrup, brown sugar, cinnamon, nutmeg, black pepper, and salt. Heat over medium heat until it begins to simmer, stirring frequently. Reduce heat and let it simmer for about 10 minutes until slightly thickened.

Smoke the Bacon
Place the soaked wood chips directly on the coals or in a smoker box. Smoke the bacon for 1 to 1.5 hours, brushing with the bourbon maple glaze every 20 minutes.

Finish and Serve
Once the bacon is crispy and caramelized, remove it from the smoker. Let it rest for a few minutes before slicing. Serve warm, drizzled with any leftover glaze.
