Instructions

1

Make the Streusel Topping

In a medium bowl, combine flour, brown sugar, and cinnamon. Add the softened butter and mix until crumbly. Set aside.

2

Prepare the Lemon Honey Butter

In a small bowl, beat together the softened butter, honey, lemon zest, and lemon juice until smooth and creamy. Set aside.

3

Make the Blueberry Infused Maple Syrup

In a small saucepan, combine maple syrup and fresh blueberries. Heat over low until warmed through. Mash lightly to release blueberry juices. Remove from heat and set aside.

4

Prepare the Pancake Batter

In a large bowl, whisk together flour, baking powder, sugar, and salt. In another bowl, mix milk, egg, and melted butter. Combine wet and dry ingredients until just mixed. Gently fold in fresh blueberries.

5

Cook the Pancakes

Preheat a griddle or non-stick skillet over medium heat. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.

6

Assemble the Dish

Serve pancakes warm, topped with streusel, a dusting of powdered sugar, a dollop of lemon honey butter, and drizzle with blueberry infused maple syrup.
