Prepare the Strawberry Sauce
In a small saucepan over medium heat, combine the fresh strawberries, sugar, and a splash of water. Cook until the strawberries break down and the mixture thickens, about 10 minutes. Set aside to cool.

Make the Pancake Batter
In a large bowl, whisk together the flour, baking powder, sugar, salt, and cinnamon. In another bowl, mix the milk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the fresh strawberries.

Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat and grease lightly with butter. Pour 1/4 cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes until golden brown.

Assemble the Dish
Stack the pancakes on a plate, spread a generous layer of NY style cheesecake spread on each layer, drizzle with grandma’s strawberry sauce, and top with whipped cream. Sprinkle with additional cinnamon if desired.
